step 1: sifting NO. 1 matcha through a fine-mesh sifter into a ceramic bowl, the first step of the ritual

STEP 1

sift

Sift 1-2 teaspoons of matcha into your bowl or cup.

step 2: pouring hot water into matcha at 70-80°C, the right temperature for whisking

STEP 2

add water

Add ½ cup (120 ml) hot water at 70–80°C (160–175°F) for usucha (thin tea), the standard preparation.

For koicha (thick tea), a more concentrated traditional pour, use ¼ cup (60 ml) instead.
